Here are a few other simple, stand-by recipes we’ve come up with on our own over the years.
Salmon with Fresh Dill
1 bunch fresh dill
2-3 cloves garlic
Olive Oil
black pepper to taste
Chop dill and garlic together until finely minced. Add pepper to taste. Place in a bowl and add enough olive oil to make a paste. Spread paste on fillets or steaks and grill or bbq steaks.
Sun-dried Tomato Salmon
1/2 cup sun dried tomatoes packed in oil
2-3 cloves garlic
Olive Oil
Lemon slices
black pepper
Again, mince all ingredients together, blend with olive oil to make a paste, and spread on salmon pieces just before cooking.
Jack Daniels Salmon
(especially good for reviving a piece of fish that’s been in the freezer for a long time)
equal parts (approx 1/2 cup) olive oil and rye whiskey
1 tbsp soy sauce
1tsp worchestershire sauce
3-4 cloves crushed garlic
pepper to taste
Marinade fish for 4 hours or more before cooking. Be careful with open flame — the whiskey will ignite!
